“Originally from Mexico City, I traveled to many countries as a young man, France, and all over the United States. Everywhere I went I saw delis, but there was one deli I always was on the lookout for and never found: a Latin deli. If I ever opened my own restaurant, I decided, it’d be a Latin deli. Over the years, I worked in the kitchens of several restaurants until I eventually began working in restaurant management.
When I opened Latin Deli, all my talents came together. I put extra focus on the presentation of each meal. But the main concern is the taste. We make everything right here when it’s ordered. Nothing is pre-made in the back, and we buy as much as we can from local markets. It’s like a fusion of culture. I use the chicken from Mexico, I use the pork from Peru, and I use a special sauce from Venezuela. All of the menu is a fusion.”

“Latin Deli is an example of the global gastronomic exchange that happens today, a fusion of traditional and contemporary.”
What does the future look like for your company?
“We are going to create a chain of deli restaurants.”
